Ingredients


Makes: 4 servings
  • 1/2 lb (225 g) green beans, steamed or boiled, then cooled
  • 2 large potatoes, boiled, cooled, and cut into bite-sized pieces
  • 1 large tomatoes, cut into wedges, or 1 cup (250 ml) halved cherry tomatoes
  • 1/4 C (60 ml) olive oil
  • 1 Tbsp (15 ml) Garlicky Dill Topper
  • 1/2 C (125 ml) corn – optional
  • 1 Tbsp (15 ml) balsamic vinegar
  • Sea Salt (Grinder), freshly ground, to taste
  • Black Pepper (Grinder), freshly ground, to taste
  • Garlicky Dill Topper

Preparation


 
  • In a large bowl, combine first 6 ingredients. Allow to marinate for at least 1 hour for flavours to combine.
  • Immediately before serving, splash balsamic overtop and gently toss.
  • Season with Sea Salt and Black Pepper.
  • Top with Garlicky Dill Topper, if desired.

Tip


 

Preparation Tip: To serve hot, do not cool the beans and potatoes. Simply prepare as directed and serve immediately.
