Ingredients


Makes: 8 servings
  • 1 lb (450 g) green beans, steamed or boiled, then cooled
  • 3 large potatoes, boiled, cooled, and cut into bite-sized pieces
  • 2 large tomatoes, cut into wedges, or 2 cups (500 ml) halved cherry tomatoes
  • 1/2 C (125 ml) olive oil
  • 1 Tbsp (15 ml) Marinara Sauce Mix
  • 1 C (250 ml) corn, optional
  • 2 Tbsp (30 ml) balsamic vinegar
  • Sea Salt (Grinder), to taste
  • Black Pepper (Grinder), to taste

Preparation


 
  • Combine first 6 ingredients in a large bowl. Allow to marinate for at least 1 hour for all flavours to combine.
  • Immediately before serving, splash balsamic vinegar overtop and gently toss.
  • Season to taste with Sea Salt and Black Pepper
  • Tip: To serve hot, do not cool the beans and potatoes. Simply prepare as directed and serve immediately.
